Sweet Potato Casserole.....kinda


So I love sweet potatoes, but I am extremely picky about how they are cooked. I am teetering w/ a recipe from what I have viewed from other recipes on AR. This is what I came up with.


1 really really big sweet potato

1/3 cup of brown sugar

1 tbs cinnamon

1/2 stick of butter
wash and wrap SP in foil and bake for...IDK....and hour and a half at 350. (I got impatient and upped it to 400 after an hour.
unwrap SP and peel. Smash SP w/ sugar, cinnamon and butter.

Top w/ a sprinkle more of cinnamon and brown sugar and bake for about 20 more mins at 350.

This was good, however, it was not very thick and it was a touch on the sweet side. Next time I think I'll add an egg and maybe some heavy cream to the mix. Also, I may skip the brown sugar and cinnamon top. It was alright.

If you can promise me a REALLY good recipe with sweet potatoes, I will give it a try. The Hubby will not, the children will be threatened & forced to try too! ;) I have never liked them but I KNOW they are really good for you so..... if you could help me out I will try.
